Grilled Elk Crostini's w/ Holiday-Themed Jam make for one delicious appetizer

Ingredients
• 1 lbs. elk medallions
• Salt and pepper to taste
• 1 (8 oz. package) garlic & herb bagel chips
• 1 (8 oz. container) mascarpone cheese, as needed
• 1 (14 oz. container) wild lingonberry jam, as needed
• Chives to garnish

Procedure:
1. Preheat grill to 500 degrees. Meanwhile, season the elk medallions with salt and pepper to taste.
2. Once the grill is preheated, add the medallions and cook for about 15 minutes, flipping as needed. Once the internal temperature registers ~130 degrees, remove the elk from the grill.
3. Allow the medallions to rest for ~10 minutes, then thinly slice for the crostini’s.
4. Take out a bagel chip and slather with mascarpone cheese. Top with a slice of elk, a spoonful of lingonberry jam, and chives to garnish. Repeat this process as many times as needed. Serve & enjoy!
