3 Meals in Under 30 Minutes w/ Flank Steak

Servings: 4-6
Base Ingredients:
2 lbs. flank steak
Olive Oil
SPG or favorite rub
Meat & Two Ingredients:
1 bundle asparagus
Olive Oil as needed
1 tsp garlic salt
Precooked rice
Steak Salad Ingredients:
2 C romaine, chopped
¼ C blue cheese
¼ C red onions, diced
¼ cup cherry tomatoes, halved
2-3 T balsamic vinaigrette
Steak Taco Ingredients:
Tortillas
3 T guacamole
2 T cotija cheese
2 T salsa
Lime wedges, as needed
For the Flank Steak:
Preheat the grill to high setting. Meanwhile, slather the steak with olive oil and then season liberally with the rub on both sides. Add the flank steak to the grill and cook for 10-15 minutes based on size, flipping it halfway through. Once the internal temperature registers 130-135 degrees, remove the flank steak & shut off the grill.
After the flank steak has rested for 10-15 minutes, slice against the grain into ¼ - ½ in. slices. Next, take half of those slices and cut them into cubes. Set both aside for the following meal options.
For the Meat & Two:
Take out the asparagus and trim about 1/3 of the bottom half with a sharp knife, as this is inedible. Next, slather the asparagus in olive oil and season with garlic salt. Place the asparagus on the grill over high heat (I did this in a grill basket, but you can cook these directly on the grates if you like) and cook for ~5 minutes, until slightly charred but still firm.
Plate the asparagus with rice and the sliced flank steak. Serve & enjoy.
For the Steak Salad:
Add the romaine to a bowl with the listed toppings and a serving of the cubed flank steak. Serve & enjoy.
For the Steak Tacos:
Layer a tortilla with guacamole, cotija cheese, steak, salsa, and a pinch of lime juice. Repeat this process as needed, then serve & enjoy!
